Seib joined the [[Sunnybank Rugby|Sunnybank]] rugby club in Brisbane.<ref name = qru-1998/> He played for the Queensland Under-21 team in 1995,<ref name =u21-1995/> and was capped for the [[Australia national rugby sevens team|Australia 7s]] side,<ref name=next-gen/> touring in 1999 to Uruguay and Argentina.<ref name=mercury-1998/>

Seib was made Head Coach of Aberdeen in 2011.<ref name=next-gen/> From 2012 he coached [[Sunnybank Rugby]].<ref name=uq-2014/> He later became an Assistant Coach at Brisbane City{{hsp}}<ref name=cm-2015/> with responsibility for the team's attack.<ref name=tkp/> In 2016 he was promoted to Brisbane City's Head Coach position.<ref name=rays-2016/><ref name=news-2016/><ref name=rugby15-2016/> Seib became head coach of {{rut|Queensland Country}} in 2018.<ref name=btr-2018/>
